Oral history interview by Mary Heers with Dillan Robison. Topics include: Different employment he has had over the years; His experience working at a mostly automated cheese-packing factory; Refrigerated trucks delivering several hundred pound blocks and wheels of cheese; Large blocks and wheels of cheese being pushed through a "harp" of steel wires to cut it down to normal block sizes; Packaging procedures such as vacuum packing, wrapping, or zipper bags; Packaging cheese from several U.S locations; Shift changes from packaging to sanitation; Security procedures to maintain temperature control and integrity of cheese before it reaches the consumer; A couple years spent in Wyoming drilling for methane gas; Learning cedar shake/shingle roofing and wood restoration as a young man; Buying the roof restoration business and continuing to work on restoration of historical buildings seasonally; The restoration of a house that his great-grandfather built; restoration on several historical buildings in Fillmore; The frequent presence of hornet (a type of wasp) nests under cedar shingles and sometimes getting stung ; An allergy to wasps and carrying an epipen; Safety gear used for working on roofs; Appreciating the details that restoration work involves, and taking pride in his work. |

Mr. Dillan Robison works in the Great Lakes Cheese, a cheese-packing plant in Fillmore, Utah. He describes the processes that happen in the plant, and how they work. He also spent time as a roofer/historic and wood restoration, eventually buying the business. He spent time as a methane driller, in Wyoming in the roofing off season. |
