Take twenty quarts of water, five pounds of sugar, three ounces of white ginger, and an ounce of stick liquorice, and boil them well together; when it is cold put a little new yeast uponit, but not too much; then put it into the barrel for ten days, andafter that bottle it: put a lump of powdered white sugarinto every bottle.
